Ritz Chicken – May 2021
Growing up as an Army brat and living in many locations both in America and abroad, I was exposed to a wonderful diversity of foods. Later I became a Navy wife and enjoyed not only the comradery of fellow Navy wives but also the delicious recipes they shared with me. I was delighted when I was made aware of a series of cookbooks available called “Recipes on Parade”. All the recipes were provided by military wives and I knew from my own experience that many military wives were wonderful cooks. The Meats cookbook of the series soon became my very favorite cookbook. The following recipe is from that cookbook as will be others in the months to come!
½ cup sour cream
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
1 teaspoon celery salt
½ teaspoon paprika
1 teaspoon salt (or less if desired)
Pepper to taste
1 clove garlic, crushed
6 chicken thighs (with skin on)
1 cup Ritz Cracker crumbs (I use a blender to crumble the
crackers)
3 tablespoons butter, melted
Combine the first 8 ingredients in a bowl. Dip each piece of chicken in this mixture and then in the cracker crumbs. Arrange in a flat buttered baking dish, skin side up. Dribble the melted butter over the chicken. Bake at 350 degrees for 45-60 minutes.
